Baking Lows to New Baking Highs

Hello Adventurers!

Today I should be going through my latest version of a cookbook recipe, re-jigged to be gluten, latctose and yeast free, but unfortunately it became a massive fail and, to be completely honest with you, I have no idea why the welsh tea cakes that I was making crumbled as I put them into the pan to cook,  crumbled again when I tried to flip them over and refused to cook through.  I thought that I had done everything that I was supposed to do when trying to re-create the recipe with gluten, lactose and yeast free ingredients.  So, instead, this blog is about how soul-destroying it is when things just don’t work out and, MUCH more importantly, what I plan to do about it.  Don’t forget to check out my video below!

Gluten, Lactose and Yeast Free Oh-Go-On-Then Lava Cake (Tesco Magazine – Magazine Recipe)

Hello Adventurers!

Today I am going to be showing you how to make the ‘Oh-Go-On-Then Lava Cake’ from the Tesco magazine.  Now, I am not going to lie to you but it went wrong for me when I filmed it, but I think that it smelt and tasted great so I don’t see why I cannot upload it anyway.  I was supposed to use clingfilm to line the microwave-safe bowl but I spent, what felt like half an hour, battling with it, so in the end I used spray oil and a pastry brush.  However, this kind of turned into a bowl cake for me as I didn’t add enough spray oil to then get the cake out from the bowl, so I know where the mistake was and I can correct this for you guys!

Gluten Free and Lactose Free White Chocolate Chip Sugar Cookies

Hello Adventurers!

I have had this recipe noted down for a long time to try out.  I have actually become lactose free since I made the milk chocolate chip version, link here, so I had fun developing this recipe for a lactose free perspective as well as the usual gluten free and yeast free one.  You can use as little or as much of the lactose free white chocolate as you want, what I have used is only a guide.

Orangeade

Hello Adventurers!

I think that this is the perfect non-alcoholic drink to go with your Easter delights.  I think that it adds a brilliant colour to the table, any children will love drinking it… especially in those bunny cups I bought in my Easter haul (link here for the blog post) (link here for the video).  This orangeade recipe will make approximately 800 ml.

Lactose Free Mini Chocolate Eggs

Hello Adventurers!

Today I am continuing my countdown to Easter Sunday.  Since becoming lactose free, I have found it hard to get as involved in Easter as I used to, as I cannot eat any of the chocolate.  Today’s recipe allows me to make my own, get involved and enjoy Easter eating something I know won’t make me ill.  I hope that you find it as useful and fun to make as I did. Gluten, Lactose and Yeast Free Acia-sy Peasy Pizza (Women’s Health – Magazine Recipe)

Hello Adventurers!

Today I am making a gluten free, lactose free and yeast free version of Acia-sy Peasy Pizza – from the magazine Women’s Health (their May 2016 issue).  Seeing as we are now in the middle of ‘Lent’ I wanted to try and find something that was healthy, but felt like it was naughty.  I was going through my magazines and couldn’t find anything until I stumbled on to this beauty.  Although it is called the ‘Acia-sy Peasy Pizza’, I couldn’t find or buy acia puree (a key ingredient) ANYWHERE… so in the end I changed a few things around and found a recipe, using all of the original ingredients that is pretty good.
