Gluten Free Valentine’s Day Stuffed Honey and Mustard Chicken Peppers

Now, I am not going to lie to you, I was really struggling to work out what would work for a Valentine’s dinner, bearing in mind that I previously blogged a gluten and yeast free pizza recipe that would fill me up for most, if not all, of the rest of the day!  I wanted a simple not-too-filling meal, and I was scrolling through Pinterest, link here for my account, and came across a post, original noted at the bottom of this post under ‘inspiration from’, for a baked honey and mustard chicken!  I loved this the moment I saw it and thought what else could I do with it that wouldn’t be too strenuous on the stomach, and I came up with Stuffed Honey and Mustard Chicken Peppers with Rice and Heart Veggies.  I hope you enjoy it!

Gluten Free Valentine’s Day Heart Vanilla Sugar Cookies

Hello Adventurers!

When I tried what I wanted to do with this blog post, it didn’t work, so I went with the best second option!  Here are some simple Gluten Free Heart Vanilla Sugar Cookies!

Ingredients:

90g Butter, softened

100g Caster Sugar

1 Egg, beaten

1 tsp Vanilla Extract

Red Food Colouring

240g Gluten Free Plain Flour

Equipment:

Scales

Measuring Spoons

Large Mixing Bowl

Wooden Spoon/Electric Hand Whisk

Baking Paper

Rolling Pin

Heart Cookie Cutter

Cookie Sheet/Baking Tray x 2

 

Instructions

Measure out your ingredients and grab a large mixing bowl.

Add your butter and caster sugar to your mixing bowl and beat until smooth.

Add in your egg, vanilla and red food colouring and beat together.

Add in your flour, a little at a time, until fully combined.

Wrap your mixture into some baking paper and put in the freezer for an hour and fifteen minutes.

After this time, preheat your oven to 200C/180C Fan/Gas 6.  Roll out your dough to an inch or less thick, depending on how thick you want your cookies, between two pieces of baking paper.

Place some baking paper on your cookie sheets.

Cut out your heart shapes and place them on your cookie sheets ready to cook.  When you run out of space to cut out your shapes, bring your remaining dough together and make into a ball, roll out and begin cutting again, do this until you don’t have enough dough to make any more cookies.

Place your cookie sheets in the oven and bake for ten to thirteen minutes.

Leave to cool for ten minutes on the cookie sheets, then transfer onto a cooling rack.

Serve and enjoy!

Gluten Free and Yeast Free Valentine’s Day Pizza

Hello Adventurers!

How is your Valentine’s Day going, let me know below!  This is a recipe that I have wanted to make for a really long time.  The problem that I have with pizza is that I cannot have the gluten, but I also cannot have yeast, which means that I cannot even have the gluten free alternatives!  I was thinking of what I could do for a “lunch” for Valentine’s Day and decided that this is what I would want, so let’s have at it!

Gluten Free Shove Tuesday/Pancake Day

Hello Adventurers!

Gluten Free Sweet Shortcrust Pastry

Hello Adventurers!

Gluten Free Tanya Burr Chocolate Chip Cookies
