Today yet another in my countdown to Easter Sunday, making nests for my lactose free chocolate Easter eggs (link here on how to make the lactose free chocolate eggs). Lactose Free Mini Chocolate Eggs

Hello Adventurers!

Today I am continuing my countdown to Easter Sunday.  Since becoming lactose free, I have found it hard to get as involved in Easter as I used to, as I cannot eat any of the chocolate.  Today’s recipe allows me to make my own, get involved and enjoy Easter eating something I know won’t make me ill.  I hope that you find it as useful and fun to make as I did. Gluten Free Banana American Pancakes

Hello Adventurers!

Since it is Mother’s Day this Sunday, I wanted to dedicate a recipe to my AMAZING Mum.  Words cannot describe how much I love, care and admire you.  Your strength, patience and understanding show no bounds and I thank God every day that you are in my life and are my Mum.  Now with all that soppy stuff out of the way (where are the tissues…), I thought that I would quickly talk about why I have chosen this recipe to post.  My Mum loves bananas and pancakes and I wanted, as you will know from a lot of my other recipes, to combine the two.

Gluten Free Crepes with Roasted Strawberries

Gluten Free Cinnamon Popcorn

Gluten Free Oven Baked Salmon Fishcakes

Hello Adventurers!

Fishcakes are one of my favourite foods, however to master this recipe I had to get a bread recipe down so that I could use the breadcrumbs.  After I had completed that, which I am pleased to say that I have, I could master this recipe.  I also managed to edit the recipe so that I could cook them in the oven as well which I much prefer to frying them.  Let’s-a-go!
