Gluten, Lactose and Yeast Free Oh-Go-On-Then Lava Cake (Tesco Magazine – Magazine Recipe)

Hello Adventurers!

Today I am going to be showing you how to make the ‘Oh-Go-On-Then Lava Cake’ from the Tesco magazine.  Now, I am not going to lie to you but it went wrong for me when I filmed it, but I think that it smelt and tasted great so I don’t see why I cannot upload it anyway.  I was supposed to use clingfilm to line the microwave-safe bowl but I spent, what felt like half an hour, battling with it, so in the end I used spray oil and a pastry brush.  However, this kind of turned into a bowl cake for me as I didn’t add enough spray oil to then get the cake out from the bowl, so I know where the mistake was and I can correct this for you guys!

Saying all that, I think that this recipe is a perfect recipe just as a, what I now like to call, ‘bowl cake’ so it is up to you what you would like to do.  This recipe with of course be gluten free, lactose free and yeast free. Don’t forget to check out my video below!

45ml milk (I use lacto free milk)

45g butter, melted

1/2 tsp Vanilla Extract

53g Gluten Free Self-Raising Flour

45g Caster Sugar

23g Cocoa Powder

8g Chocolate Spread (I used a dairy and lactose free one, link below)

Icing sugar for dusting

Measuring Jug

Measuring Spoons

Jug (optional, you can just use your measuring jug again)

Hand-Held Whisk/Electric Hand Whisk (I personally found a hand-held whisk to be easier to use)

12cm deep/12cm wide Microwave-Safe Bowl

Spray Oil

Pastry Brush

Trivet/Cooling Rack

First things first, measure out and prepare all of your ingredients so that they are completely ready for you to use.

After that, grab your jug/measuring jug, hand-held whisk/electric hand whisk, spatula, your milk, melted butter, vanilla extract, flour, caster sugar and cocoa powder.

Place all of these ingredients into your jug and whisk together for about two minutes until well combined.

Now, set this off to the side until your have finished preparing your microwave-safe bowl.

To prepare your microwave-safe bowl you will need the bowl (funnily enough) your spray oil and your pastry brush.

Spray your microwave-safe bowl with your spray oil, use more then you think you will need as, like I said in the introduction, I didn’t add enough oil, and then spread the oil all over your bowl using your pastry brush.  However, if you just want to eat it from the bowl don’t add as much.

Now, grab your prepared mixture.

Place a third of your mixture into your bowl.

Place this into the microwave on a high for one minute and fifteen seconds.

Once this is done, set it off to the side to cool for one minute on a trivet or cooling rack.

After this time, pour the rest of the batter into the bowl and grab your chocolate spread.

Spoon your chocolate spread on top of your uncooked batter.

Now, again, place your mixture back into the microwave on high for another two minutes and forty-five seconds.

Once this is done, place your bowl off to the side and leave for two minutes and grab your plate.

After this time, place your plate over your bowl and tip them both upside down so that the plate is at the bottom and your bowl on top, BEING CAREFUL NOT TO BURN YOUR FINGERS AS THE BOWL WILL BE HOT.

Slowly tap and ease your cake out of it’s bowl, but, if like me, it doesn’t drop onto your place just grab your icing sugar and your sieve.

Place your icing sugar into your sieve over your bowl and dust with your icing sugar, or sieve it over the plate (if it did drop out for you).

Serve and enjoy!
