Gluten Free Peanut Butter Crunchies (Making Baking Special – Magazine Recipe)

Hello Adventurers!

I have sooo many magazines, along with magazine and newspaper cut outs to do with anything in the kitchen.  It is almost as bad as my cookbook collection!  And because of that I want to try and work my way through some, if not all, of the recipes in them!  So, following the same style as my cookbook recipe, link here, and YouTube recipe, link here, over the last couple of weeks, I want to dedicate some time to my magazines and cut outs as well, trying to make the recipes gluten free, yeast free and lactose free so that other people who are in my situation can enjoy those recipes as well.  Again, funnily enough like last week, I wanted to do something super easy and am really excited today to try out ‘Making Baking Special’ magazine’s recipe, ‘Peanut Butter Crunchies’. 

Let’s-a-go!

Ingredients:

25g Smooth Peanut Butter

25g Butter, softened, I like to use lactofree butter

25g Caster Sugar

25g Light Brown Muscovado Sugar

½ Medium Egg, beaten

50g Gluten Free Self Raising Flour
Equipment:

Scales

Cookie Sheets/Baking Trays x 2

Baking Paper

Pen/Pencil

Scissors

Spray Oil

Large Mixing Bowl

Electric Hand Whisk

Spatula

Teaspoons x 2

Cooling Rack

Method:

Measure out all of your ingredients and preheat your oven to 180C/160C Fan/Gas Mark 4. Line your cookie sheets or baking trays with baking paper and place off to the side until you are ready to bake.

Grab your large mixing bowl, placing in your peanut butter, butter, and both sugars and mix together until well combined.

Now, grabbing your half an egg, again, mix together until you have a nice and smooth mixture.

Add your flour, a little at a time, and fold it into your mixture until fully combined, scraping down your bowl with a spatula, or whatever you have access to, so you don’t lose any of that delicious mixture.

Using your teaspoons, make small balls of your mixture and place your these onto your prepared cookie sheets or baking trays well spaced apart as they spread out when in the oven.

Place into your preheated oven for fifteen minutes.

Once your crunchies have finished baking, place them, still on their tray on to a cooling rack until fully cool.

Once this is done, serve and enjoy!
