Gluten Free and Yeast Free Milk Chocolate Chip Ring Doughnuts

Hello Adventurers!

I love chocolate chips and I love doughnuts, so how I didn’t combine these two things earlier baffles me! Let’s-a-go!

Ingredients:

70g Gluten Free Self Raising Flour

Pinch of Salt

40ml Dairy Free Milk

1/4tsp Vanilla Extract

50g Dairy Free Butter, softened

45g Caster Sugar

1 Egg, beaten (I used medium)

25g Milk Chocolate Chips

Equipment:

Scales

Measuring Spoons

Measuring Jug

Doughnut Baking Tray

Cake Release Spray or Spray Oil

Three Mixing Bowls

Wooden Spoon or Electric Mixer

Spatula

Tall Glass

Piping Bag

Tablespoon

Scissors

Teaspoon/Skewer

Cooling Rack

Method:

Measure out your ingredients and preheat your oven to 180C/160C Fan/Gas Mark 4.  Prepare your doughnut baking tray by spraying it with cake release oil or spray oil.

Place your flour and salt into your first mixing bowl and mix together till fully combined.

Add your vanilla extract to your milk and mix together.

Add your butter and caster sugar to your second (main) mixing bowl and mix together until light and fluffy.

Beat in your egg.

Gradually add your flour and milk mixtures to your butter and sugar bowl, alternating between the two, until your batter is smooth.

Cover your chocolate chips with some flour, starting off with a tablespoon and mix until well coated.  Add more if necessary.

Slowly fold in your milk chocolate chips until as evenly distributed as you can.

Grab your tall glass, tablespoon and piping bag.  Place your piping bag into your tall glass, bending the end of your piping bag over the edge of the glass.  Using your tablespoon add the batter to your piping bag.

Once all of the mixture is in the piping bag, unravel the piping bag, twist the top and then, holding your piping bag pointy end up, cut off the end, big enough to be able to get the chocolate chips through the end, and begin piping into your doughnut baking tray.

Once all the mixture is evenly spread between the doughnut sections, place in the oven to cook for 5 -10 minutes, or until a teaspoon handle or skewer is inserted and comes out clean.

Leave to cool on a cooling rack in the doughnut baking tray until completely cool.

Once cooled serve and enjoy!
