Cucumber and Mint Lemonade

Hello Adventurers!

I saw this being sold as flavoured water in M&S and it gave me the idea to make this lemonade.  This drink is sooo refreshing, especially in the hot weather that we have been having, I cannot wait to try it with just water to see how refreshing it is!  I also love that it has the flavours of lemonade and the sweetness of the golden syrup just to give it that little extra something!  This recipe was for a 250ml glass.

Ingredients:

Juice of One Lemon

Golden Syrup (I used 1 tbsp)

Water

12 Cucumber Slices, roughly 0.5cm – 1cm thick

5 Sprigs of Mint

Equipment:

Measuring Jug

Chopping Board

Small Knife

Lemon Squeezer

Bowl x 2

Measuring Spoons

Sieve (Optional)

Large Bowl

 

Method:

Work out how much your glass can take by filling it with water to your desired amount and emptying that into a measuring jug.

Cut your lemon in half with a small knife on a chopping board and, using your lemon squeezer, squeeze out all the juice from both halves of the lemon.  I didn’t have a lemon squeezer so I did it into a measuring jug as I found that this stopped the juice from squeezing everywhere.

Pick the seeds out of your lemon juice and set aside into a spare bowl.

Tip your lemon juice into your measuring jug and add food colouring to the lemon juice mixing with a teaspoon, until it is the desired colour.  I found that it took a long time to mix in the food colouring as it formed little balls at the bottom of my mixture.  If you have the same problem and they just won’t mix in properly, you can pour your mixture through a sieve to get rid of them.

Add water until it reaches your desired amount and mix together.

Add golden syrup to taste (I used a tablespoon and one teaspoon) and mix for a final time.

Place your drink into a large bowl and add your cucumber and mint.  Place in the fridge overnight.

In the morning, pour into your glass, through a sieve to get rid of the cucumber and mint (setting them aside in a bowl).

Serve and enjoy!
