Gluten Free Simple Chocolate Cupcakes

Hello Adventurers!

Chocolate, you have just got to love it.  I probably love it way too much (I found this out after I named my dog after my favourite chocolate – Magic Stars!) and that love will probably never die, which is just fine by me!  These are some simple chocolate cupcakes, lets-a-go!

Ingredients:

150g Dairy Free Butter, Softened

150g Caster Sugar

2 Medium Free-Range Eggs, Beaten

150g Gluten Free Self-Raising Flour

20g Cocoa Powder

Equipment:

Scales

Measuring Spoons

12 – Hole Muffin or Cupcake Tin

12 Cupcake Cases

Cake Release Spray or Oil Spray

Mixing Bowl

Wooden Spoon/Electric Hand Whisk

Sieve

Spatula

Ice Cream Scoop (optional)

Tablespoon (optional)

Teaspoon

Cooling Rack

 

Method:

Measure your ingredients and preheat the oven to 180C/160C Fan/Gas 4, also line a 12-hole muffin tin with paper cases. I found that if you give the cases a little spray with oil, after putting your cases in, it means that when your cupcakes are cooked, the mixture doesn’t stick to the cases, meaning you don’t loose any of your scrummy cakes.

Grab your mixing bowl and tip the sugar and butter into it. Cream them together thoroughly with a wooden spoon or an electric hand whisk until light and fluffy. Add in the eggs and again, beat together. This may take a while, but it is better to do it now so that you don’t have little bits of butter in your mixture.

Add your flour and cocoa powder together and mix. Sieve this in, a little at a time and fold it in to your buttery egg mixture until fully combined.

Spoon, or using an ice cream scoop, spread your mixture evenly into your cupcake cases, scraping down the sides of your bowl so that you don’t loose any of that mixture, then bake for 15 – 20 minutes. You can check if these are cooked using different ways, but I prefer inserting a teaspoon handle/cake tester/skewer and seeing if it comes out clean.

Leave the cupcake tray to cool for 10 minutes on a cooling rack and then remove the cupcakes onto the cooling rack, leaving them to cool completely.
